Grease Trap Legalization
April 28, 2017
Miami-Dade County has recently been increasingly stringent on restaurants and food services alike due to an enormous grease waste problem in the countys' sewage system. The Department of Envoronmental a Resource Management (DERM) is hitting food establishments hard with new requirements for their grease discharge systems. Regardless if the business owner already has an approved Fats, oil, grease permit l, or FOG Permit, the county is forcing business owners and landlords to comply with their new FOG guidleines.
The problem, in a nutshell, is that the grease that is being introduced to the Countys' sewage system is causing clogs and the sanitary pipes. Grease tends to clump up on the interior sides of the pipes, and will solidify and accumulate over time; no different than a clogged artery due to eating fatty and greasy foods!
